Delicious, plant-packed protein: introducing our latest vegan creation, the Asian Tempeh Salad
Surrounded by a rainbow of organic vegetables, including carrots, greens, purple cabbage, radishes, and more, tempeh is the star of this vegan salad. We are crazy about tempeh. Once you know a little more about it, you will be, too.
What is tempeh? A staple product of Indonesian cuisine, tempeh is made from partly cooked, fermented soybeans that naturally bind into a patty-like form. Grains may also be added. Tempeh has a richer nutritional profile than other soybean-based products (like tofu) as a result of the fermentation process. In fermentation, ingredients have been left to steep so that sugars and carbs transform into probiotic agents and healthy enzymes, sometimes with the help of a strain of beneficial bacteria.
Fermented foods are found on every continent and culture: sourdough bread, kimchi, sauerkraut, pickles, kefir, and beer, just to name a few. It is packed with protein.
The protein in tempeh leaves you feeling completely satisfied long after the salad is gone.
And not just any protein – fermented protein. Enzymes created in the process soften and partially digest the soybeans, making tempeh more easily digestible than other plant-based proteins, like tofu. These enzymes also significantly increase the absorption of nutrients, including calcium, magnesium, copper, iron, and zinc. There is a marked difference in the nutritional profile of fermented vs. unfermented soy.

If you’re a vegan with a tree nut allergy, variety is hard to come by when you’re eating out.
