A staple product of Indonesian cuisine, tempeh is made from partly cooked, fermented soybeans that naturally bind into a patty-like form. Grains may also be added.  Tempeh has a richer nutritional profile than other soybean-based products (like tofu) as a result of the fermentation process. In fermentation, ingredients have been left to steep so that sugars and carbs transform into probiotic agents and healthy enzymes, sometimes with the help of a strain of beneficial bacteria.Fermented foods are found on every continent and culture: sourdough bread, kimchi, sauerkraut, pickles, kefir, and beer, just to name a few.
